For those of you that missed Susie’s class on the 28th January - here are two of the recipe’s that she prepared for us. A complete set of recipes was distributed to those who attended the event - so make sure you don’t miss Susie’s next class.
Tofu Scramble - Adapted from, Cooking Healthy with One Foot Out the Door
(Per 1lb firm tofu, drained and crumbled)
1 med onion, chopped
2 Tbs Nutritional Yeast
½ tsp Salt
1 tsp Onion Granules
1 tsp Turmeric
¼ + cup water or vegetable broth
For extra flavor add
2 tsp cumin
1tsp thyme
1 tsp paprika
In a pan, sauté the onions in water or broth over medium heat until they are soft. Add tofu and combine with cooked onions. Sprinkle remaining ingredients in except for water and mix and heat through. Add water to desired scrambled egg-like consistency.
Black Bean Dip - (from The Cancer Survivors Guide).
Enjoy this dip on crackers, raw vegetables, or as a sandwich spread.
1 15-ounce can black beans, drained and rinsed, or 1 1/2 cups of cooked beans
1 cup salsa
1/2 teaspoon ground cumin (optional)
Combine beans and salsa in a food processor or blender and process until smooth. Add cumin, if using.
